Christmas Spice Granola

When your breakfast tastes like Christmas how can you not start your day in the best mood!

Ingredients

2 cups rolled oats

1/2 cup raw almonds roughly chopped

1/2 cup macadamias

1/4 cup cranberries

1/4 cup sunflower seeds

1/2 cup pepitas

1/4 cup coconut flakes

1 1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/2 tsp ground cloves

4 tbsp coconut oil (melted)

4 tbsp maple syrup

1 tsp vanilla extract

Method

Preheat 175 degrees Celsius

Add and mix all dry ingredients (seeds, cranberries and spices) in a mixing bowl.

In a seperate bowl, melt coconut oil in the microwave. Add the maple syrup and vanilla extract and whisk through with a fork.

Line a baking tray with baking paper

Spread the dry mixture evenly over the lined baking tray.

Pour the coconut oil/ maple/ vanilla extract mixture over the dry mix and massage through with hands until all mixture is wet.

Place tray in the oven and bake for 25 minutes.

Remove and stir through a few times to avoid the granola burning.

Let granola cool and add to an airtight jar.
