Cinnamon & Walnut Scrolls
Attention all breakfast and brunch hosts! This one is for you. These cinnamon scrolls are seriously delicious, I don’t know why its taken me so long to make them but i’m excited to share this recipe with you.
Dough:
4 tbsp extra virgin olive oil
1 + 1/3 cup warm milk
3 tsp instant yeast
2 eggs
1 tsp coconut sugar
1 pinch salt
5 cups white flour
Filling:
1/2 cup coconut sugar
1 1/2 tbsp ground cinnamon
3 tbsp melted olive oil spread
2 tbsp maple syrup
Icing:
3 cups icing sugar
4 tbsp milk
Method:
Combine milk, coconut sugar and yeast. Rest for 2 minutes.
Add eggs, salt and 3 cups flour. Stir through or mix with a hand mixer for 2 minutes or until a smooth consistency is formed. Gradually add the rest of the flour.
Place the ball of dough into a medium bowl and cover with a tea towel, set aside for 30 minutes.
Lightly dust a bench-top and roll out the dough into a rectangle (sprinkle more flour to lightly dust as needed).
Combine all filling ingredients in a small bowl (except walnuts).
Chop and sprinkle walnuts over the dough.
Slice the dough into strips, then roll them into scrolls.
Line a baking tray with baking paper and place scrolls inside.
Cover with a tea towel and set aside for 20 minutes.
Preheat oven to 180 degrees.
Bake scrolls for 15 minutes, then let cool. While cooling, sift icing sugar and add milk into a small bowl.
Add icing sugar and some more walnuts on-top of the scrolls.
