Healthy Choc Chunk Banana Bread

LSA is full of linseeds, sunflower seeds and almonds. It contains lots of good fats including omega 3 and 6 fatty acids in addition to high amounts of the nutrients including iron, calcium, magnesium, and vitamin E.
LSA, Eggs and greek yogurt are all good sources of protein.
Making healthier swaps when you bake is an easy and effective way to increase your nutrient intake. Using olive oil instead of butter and wholemeal flour instead of white plain flour are examples of how you can make small steps towards a healthier you.
Ingredients
3 ripe spotty bananas (skin removed, mashed)
1/4 cup Greek yoghurt
3 eggs
1/4 cup rice malt syrup (or maple syrup)
1/4 cup LSA
2 tbsp hemp seeds
1 1/2 cups wholemeal flour
100g dark chocolate (chopped roughly)
2 tsp vanilla extract
4 tbsp extra virgin olive oil
1 tsp baking soda
1/2 tsp baking powder
1 tsp ground cinnamon
2 tsp coconut sugar
Pinch of salt
Method
Preheat oven to 175 degrees Celsius
Mash your bananas in a large mixing bowl
Sift flour into the mixing bowl to avoid lumps in the batter (then empty the residue into the mixing bowl also.. this is the good stuff!)
Add in all other ingredients (except the chocolate)
Mix all ingredients together with a wooden spoon
Stir in half of your choc chunks (save the other half to sprinkle over the top)
Pour the batter into a baking tin
Pour the remaining choc chunks on top
Bake for 40-45 minutes
