Method
Preheat oven at 200 degrees Celsius
In a large pot boil water to cover potatoes with
Once water comes to the boil add potatoes and let simmer until softened.
Place a large sheet of aluminium foil on bench, followed by baking paper on top of this (you will use these two layers as the base to wrap the salmon in).
Lightly drizzle olive oil where the fish will sit
Place salmon on top of the olive oil lined baking paper (skin down).
Pat down the top of your salmon with paper towel
Brush lemon juice over the salmon
Rub half dill & half parsley over salmon
Place slices of 1/2 lemon on top of the salmon
Put another piece of baking paper over the top of your fish then cover that with another portion of aluminium foil. Fold the top two and bottom two pieces of foil & baking paper together at the sides to encase the fish with flavour.
Place salmon on a baking tray in oven for 25 minutes (if you have a smaller fish you will need to adjust your timing)
Once your potatoes are done, strain most of the water out leaving a little bit to keep them hot while your fish is cooking.
Top & tail cut beans, set aside
Chop butter into cubes, add to a bowl & melt in a microwave until soft
Add garlic to the butter & stir through
Strain potatoes, then add them to a mixing bowl
Pour garlic butter over potatoes, add remaining parsley & dill, stir potato mixture through
Scoop potatoes into a bowl to serve (removing excess butter)
Add broccolini to a steamer with 1tbsp water, heat in microwave for 2 minutes.
Repeat for beans
Remove Salmon from oven & serve
