Method

Preheat oven to 150 degrees Celsius
Roughly chop macadamias, add to a large mixing bowl
Add all dry ingredients to the large mixing bowl (except dried peaches). Set aside.
Add all wet ingredients to a small bowl, melt in the microwave or over the stove. Pour into the large mixing bowl.
Stir through all ingredients (except the peaches).
Line a baking tray with baking paper.
Spread the granola across the baking tray, bake in the oven for 12 minutes.
Remove the granola from the oven, mix around with a spoon and bake for another 5 minutes in the oven.
Once the granola has cooled, store in an airtight container.

Peaches and Cream Granola

One of my favourite refreshing breakfast recipes to make to date. This easy recipe is packed full of goodness. The main star I want to share a little about is buckwheat.

What’s so good about buckwheat?
It lowers cholesterol, blood pressure and improves heart health, its packed with disease fighting antioxidants, contains highly digestible protein, its high in fibre - meaning it keeps you fuller for longer and improves digestion, buckwheat is gluten free and contains important vitamins and minerals (vitamin K, vitamin E, thiamine, riboflavin, choline, betaine, calcium and potassium)

Dry ingredients
76g dried peaches (chopped into small pieces)
1 cup rolled oats
1.5 cups buckwheat puffs
1/4 cup buckwheat kernels
1/3 cup macadamias (chopped roughly)
1/4 cup pepitas
1/4 cup shredded coconut flakes

Wet ingredients
3 tbs maple syrup
4 tbsp coconut oil
1/4 tsp vanilla extract
