Strawberry Compote Porridge with Figs

Rainy weather in Sydney means Iā€™m back on the porridge bandwagon. This Strawberry compote porridge makes my heart sing on a cold morning - it is absolutely delish!

Oats are SO versatile and a great breakfast option to keep you fuller for longer to fuel your mornings.

Strawberry compote:
7 strawberries (diced)
1/4 lemon (juiced)
1 tbsp chia seeds
1 tsp coconut oil

Porridge:
1 fig (sliced in half)
1/2 cup oats
1 1/4 cup milk of choice
Handful of seeds (I used pumpkin and sunflower)
Drizzle of honey

Method:
Add coconut oil to a heated pot, once melted- add all compote ingredients and simmer for about 5 minutes until a thick consistency has formed, stir intermittently. Set aside while you prepare your oats.
In a seperate pot, add your oats and milk. Let it simmer until your oats have softened.
Add your oats to a bow, top with your fig, compote, seeds and a drizzle of honey.
